Jamaican Rum Fruit Cake
Fruits soaked in rum and wine for 18 months make up this dense, moist, delectable cake affectionately known as 'Black Cake'. The cake is 'fed' with rum and wine after baking to keep it's moisture and subtle rum flavours. Hints of orange peel, cinnamon and nutmeg spice up a traditional Caribbean classic.
A staple in Jamaican and Caribbean households at Christmas time, we've continued our parents legacy of baking these!
Cake Sizing: 9 inches round cake, approx 2-3 inches depth. Serves between 1 - 10 depending on your appetite!
